In reply to loveofitaliancooking. Pink Lady apples are really delicious and have a crunchy bite so they might just hold up well when roasted however I've never tried it. I love combining potatoes and other veggies together and sometimes apples. It makes for a lovely contrast in colour and flavour. Do let me know how it goes with the pink lady apples if you give it a go. Thanks so much Rosa?

This looks and sounds fantastic!! Your photos are beautiful!! I usually roast potatoes on their own, but I would have never thought of pairing them with apples! I’m wondering if Pink Lady apples would work in this recipe? It’s my kids’ favourite apple to eat, so they might be willing to try this recipe. Thanks for sharing! 🙂
